Ingredients
- 2/3 cup firmly packed brown sugar
- 1/2 cup shortening
- 1 large egg
- 1/4 cup unsulphured molasses
- 2 tsp finely grated peeled fresh ginger
- 1 1/2 cups all purpose flour
- 1 1/2 tsp baking soda
- 1 1/2 tsp pumpkin pie spice
- 1/4 tsp salt
- Gold sanding sugar
- Parchment paper

Step 1
Preheat oven to 350. Beat dark brown sugar and shortening in a medium bowl at medium speed with an electric mixer until creamy. Add egg, molasses and ginger, beat 30 seconds. Sift flour with next 4 ingredients in a small bowl. Add flour mixture to butter mixture and beat at low speed until combined.
Place sanding sugar in a small bowl. Drop dough by level spoonfuls into sanding sugar, roll to coat. Placed coated cookies 3 inches apart on parchment lined baking sheets.
Baked at 350 for 10 - 12 minutes. Cool on pan for about 5 minutes, transfer to a wire rack and cool completely.
