Ingredients
- Right before serving, stir in:
- 1 Tomato - diced
- 1 can Kidney Beans - drained
- 1 medium Onion - chopped
- 1 c Cheddar or Colby Cheese - diced
- 2 c cooked Macaroni Shells
- 2 c Shredded Lettuce
- 2 c Crushed Corn Chips
Preparation
Step 1
Toss together with salsa.
Salsa:
Combine 2c chopped tomatoes (fresh or drained), 1 medium chopped onion, 1 4oz can chopped green chiles, 1/2t salt, 1/4t coarse black pepper, 1/2t sugar and 1T vinegar and blend in a blender for just a second. It should still be a little chunky, not smooth. Keep covered and refrigerated.
