Ingredients
- Dressing:
- 1/2 cup fresh orange juice
- 1/4 cup lemon juice
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/8 teaspoon paprika
- 1 shallot, finely chopped
- 1 clove garlic, crushed
- 1 teaspoon Dijon mustard
- 1/3 cup olive oil
- Salad:
- 6 cups baby arugula
- 1 cup pomegranate seeds
- 2 pears, quartered, cored, cut into 1/4-inch-thick slices
Preparation
Step 1
In a small bowl, whisk all dressing ingredients except oil. Whisk in oil. In a bowl, toss arugula, pomegranate seeds and pears with dressing; serve.
