rhubarb rosemary chutney

Delicious with pork chops or chicken

Ingredients

  • 1 shallot
  • olive oil
  • 2 cups coarsley chopped rhubarb
  • heaping spoonful of orang marmalade
  • few tbsp water
  • pinch of salt
  • chopped fresh rosemary

Preparation

Step 1

Saute sliced shallot in olive oil with 2 cups coarsely chopped rhubarb
Add heaping spoonful of good-quality orange marmalade and a few tbsp water.
cook, stirring until marmalade blends...about 1 to 2 minutes
season with a pinch of salt and some chopped fresh rosemary.
serve atop chicken or pork
