Ingredients

  • 3 cups sugar
  • 3/4 cup hot water
  • 3/4 cup white Karo® syrup
  • 3 egg whites
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla

Preparation

Step 1

Cook sugar, syrup and water till hard ball (250°). Add vanilla.
Note: Do not stir after sugar is dissolved.
Beat egg whites till stiff. Add salt during foamy stage
Pour in slow thread over stiffly beaten egg whites. Beat on high in heavy duty mixer till starts to set up and loose gloss. Drop onto waxed paper with 2 buttered spoons.
Note: If making Pecan Rolls, butter hands and shape into small "logs" and freeze on cookie sheet.

Adjusted for altitude 238° and beat for 12 minutes.
