Concord Grape Pie

Helpful hint: To pinch off grape skins w/o bruising the fruit, squeeze gently between thumb & forefinger - kind of like shooting a watermelon seed.

Ingredients

  • 5 c Concord grapes
  • 2 apples, peeled
  • 3/4 c sugar
  • 1/2 c flour

Preparation

Step 1

1. Wash grapes & pinch of the skins, reserving the skins for later.
2. Heat grape pulp, boiling for about 5 min.
3. Put through strainer to remove seeds.
4. Use enough grape skins to layer an unbaked pie shell.
5. Slice up apples to cover grape skin layer.
6. Mix sugar w/flour.
7. Sprinkle half of mixture over skins, pour cooled pulp into shell, & add remaining flour & sugar mixture.
8. Cover w/top crust.
9. Bake 425 for 20 min.
10. Reduce heat to 350 & bake 25 min more.
