Ingredients
- 4 c fresh huckleberries (blueberries will do in a pinch)
- 3 T quick-cooking tapioca
- 2/3 c sugar
- 1/4 c apple juice
- 1 T lemon juice
- 2 T sweet butter
Preparation
Step 1
1. Rinse berries & let drain.
2. Add lemon juice.
3. Mix tapioca, apple juice & sugar together.
4. Add sugar mixture to berries, toss w/2 forks & let stand for 15 minutes.
5. Pour as many berries as will fit into an unbaked pricked pie shell, dot w/butter, & cover w/top crust, making sure to cut vents in top.
6. Place a cookie sheet or a piece of tin foil under the pie. Nothing's harder to clean off an oven than burnt huckleberry pie. Doesn't smell great, either!
7. Bake @ 450 for 10 min, then reduce heat to 350 & bake another 40-45 min more.
