Ingredients
- 2 eggs
- 1 cup sugar
- 1 cup sour cream
- 1/2 cup oil
- 1 t. vanilla
- 1/4 t. salt
- 2 c. flour
- 2 t. baking powder
- 1 T fresh lemon juice
- 1/2 T lemon zest
- 1/2 T. corn starch
- 1 t. lemon juice
- 1 lb. blueberries
Preparation
Step 1
Beat eggs and sugar on high speed for 5 minutes or until lightened in color and thick.
Add sour cream, oil, vanilla and sale and whisk on low speed until well combined.
Add flour and baking power to batter 1/3 at a time. Do not overmix.
Add lemon juice, zest, corn starch until well combined and no dry white cornstarch remains.
Pour half of the batter into the prepared pan and even out the top with a spatula. Top with half of the blueberries. Spread remaining batter than sprinkle the rest of the blueberries evenly over the top pushing them about halfway into the batter.
Bake at 375 degrees for 45-55 minutes.
