SPICY SOUTHWEST BARBECUE SAUCE

  • 1 Garlic Bulb, unpeeled
  • 2 tsp. Olive Oil
  • 2 cups Ketchup
  • 2 Celery Ribs, chopped
  • 1 cup Water
  • 1/2 chopped Onion
  • 1/2 cup firmly packed Brown Sugar
  • 1/2 cup Butter or Margarine
  • 1/2 cup Worcertershire Sauce
  • 1/2 cup Cider Vinegar
  • 2 to 3 Tbs. Chili Powder
  • 2 tsp. Instant Coffee Granules
  • 1 1/2 to 2 tsp. Dried Crushed Red Pepper
  • 1/2 tsp. Salt
  • 1/2 tsp. Ground Cloves

Preparation

Step 1

Cut off pointed end of Garlic Bulb; place Garlic on a piece of aluminum foil and drizzle with olive oil. Fold foil to seal.
Bake at 425 degrees for 30 minutes; cool. Squeeze pulp from Garlic cloves.
Combine Garlic pulp, Ketchup and remaining ingredients in a large saucepan. Bring mixture to a boil; reduce heat and simmer 20 minutes. Cool.
Pour mixture in a blender; process until smooth; stopping once to scrape down sides.
Baste meat the last 30 minutes of grilling time. Serve remaining sauce with meat.
Makes 4 1/2 cups.
