Ingredients
- 1/2 cup unsalted butter, room-temperature
- 1/2 cup brown sugar
- 2/3 cup golden syrup or molasses
- 2 1/2 cups all-purpose flour
- 2 teaspoons ground ginger
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Preparation
Step 1
Preheat oven to 325°F.
Combine the butter and sugar in the bowl of an electric mixer and beat until light and fluffy, about 5 minutes. Add the golden syrup or molasses, flour, ginger, baking soda and salt and mix to combine. Form dough into the shape of a disc and wrap with plastic film. Place in the refrigerator for 30 minutes.
Roll dough out to 1/4-inch thick on a lightly floured work surface. Cut out shapes using a small gingerbread man cookie cutter. Place the cookies onto 2 baking sheets lined with wax paper. Bake the cookies for 8 minutes. Let cookies cool for 5 minutes, then remove to a cooling rack and allow to completely cool.
