Holiday Meatballs

To keep this recipe easy, pre-purchase meatballs from Costco then just make sauce.

Ingredients
- 1 1/2 lbs. ground beef
- 3/4 cup cracker crumbs
- 1/2 cup chopped onion
- 2/3 cup sego milk
- 1 teaspoon salt
- Mix together and form in balls. Roll in flour and brown.
- Cover with sauce
- 1 (4 oz) can pineapple chunks
- 2 Tablespoons corn starch
- 1/4 cup vinegar
- 1/2 cup brown sugar
- 2 Tablespoons soy sauce
- 2 Tablespoons lemon juice
- green pepper and pimento as desired for holiday color
- (I usually 4 x's the sauce recipe for office party)
Preparation
Step 1
Drain pineapple and add enough water to make 1 cup. Blend corn starch and stir in all but pepper and pimento - Cook until clear and pour over meatballs. Simmer for 30 minutes then add green pepper and pimento and pineapple chunks. Simmer for another 15 minutes.
Serve over rice
