Cranberry ~ Apple Cake

Ingredients

  • 1 1/2 cups fresh cranberries, rinsed
  • 1 Granny Smith apple, peeled and diced
  • 1/2 cup light brown sugar, packed
  • Grated zest of 2 oranges
  • 1/4 cup orange juice
  • 2 teaspoons ground cinnamon, divided
  • 2 large eggs
  • 1 cup plus 1 tablespoon granulated sugar
  • 1 stick unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt

Preparation

Step 1

Preheat oven to 325 degrees F.

In a mixing bowl, stir together the cranberries, apple, brown sugar, orange zest, orange juice and 1 teaspoon of the cinnamon until combined. Set aside.

Using a hand-held or standing mixer, beat the eggs at medium speed for 2 minutes. Add 1 cup of the granulated sugar, the butter, vanilla and sour cream and mix just until combined. Reduce speed to low and slowly incorporate the flour and salt.

Pour the cranberry-apple mixture evenly into a 10-inch glass pie plate. Pour the batter over the fruit, spreading it with a spatula to cover completely. Mix together the remaining 1 tablespoon of granulated sugar and 1/8 teaspoon of cinnamon and sprinkle it over the batter. Bake for 55 to 60 minutes, or until a toothpick inserted in the middle of the cake comes out clean. Serve warm or at room temperature
