ROSEMARY OLIVES & FETA

Ingredients

  • 1/4 cup olive oil
  • 1 tbsp lemon juice
  • 1 tsp finely chopped fresh rosemary
  • 1 tsp grated lemon zest
  • 1/2 tsp coarsely ground black pepper
  • 1 garlic clove, minced
  • 1 cup cubed feta cheese (1/2" pieces)
  • 1/2 cup chopped roasted red peppers
  • 1/4 cup chopped fresh parsley

Preparation

Step 1

Combine first 6 ingredients in medium bowl.

Add next 3 ingredients. Stir. Chill, covered, for 6 hours or overnight, stirring occasionally.

Add parsley. Toss.
