Pork and Chive Pot Stickers

Ingredients
- 1/4 lb ground pork
- 1 T minced chives
- 1 1/2 tsp soy sauce
- 1 1/2 tsp dry sherry
- 1 T minced, peeled fresh ginger
- 1/2 tsp sesame oil
- 1/2 tsp cornstarch
- 20 wonton wrappers (from 12 oz pkg)
- 1 T vegetable oil
- *serve with Soy-Ginger Dipping Sauce

Preparation
Step 1
1. In bowl, combine pork, chives, soy sauce, sherry, ginger, sesame oil, cornstarch, and 1 T water.
2. Place a heaping tsp of pork mixture in center of a wonton wrapper. Lightly wet edge of wrapper and fold over and press to seal tightly. Repeat. Makes about 20. Freeze extra pot stickers on a cookie sheet at this step if desired. When frozen, transfer to bag.
3. In 2 batches, cook dumplings in large pot of boiling water until cooked through (4 minutes) and transfer to a plate.
4. In large nonstick pan, heat oil over med-high heat. Cook pot stickers in 2 batches until browned, about 1 1/2 minutes per side.
Serve with Soy Ginger Dipping Sauce
