SWEET POTATO****Roasted Sweet Potatoes with Rosemary-Honey Glaze

Ingredients

  • Honey-rosemary glaze:
  • 2 large sweet potatoes, cubed 3/4" to 1" or 1-1 lb. package PC diced sweet potatoes, cut into smaller cubes
  • 1 tablespoon EVOO
  • salt and pepper to taste
  • 2 tsp fresh rosemary, chopped
  • 1 tbsp olive oil
  • 1 tbsp honey
  • 1 tbsp red or white wine vinegar - I used Sherry
  • 1 large garlic clove, grated
  • 1 small pinch cayenne pepper
  • salt and pepper to taste

Preparation

Step 1

Preheat oven to 400 degrees.

Toss sweet potato cubes in a large bowl with olive oil and salt and pepper and spread onto baking sheet in one layer.

Bake for 30-40 minutes, until golden brown, crispy on the edges and soft in the centre.

Meanwhile, add the glaze ingredients to the same bowl and set aside.

When sweet potatoes are done, add them to the bowl, mix well and serve.
