Peanutty Baked Chicken Cutlets

  • 2 T honey
  • 2 T dijon mustard
  • 1/3 cup peanuts
  • 1 cup Panko bread crumbs
  • 4 (1/2 in thick) chicken breast (about 1 lb)

Preparation

Step 1

1. Preheat oven to 500.

2. Combine honey and mustard in a small bowl and mix well.

3. Place peanuts in a food processor and pulse until finely chopped. Combine peanuts and panko in shallow bowl.

4. Brush each cutlet with honey mixture and dredge cutlets in panko mixture.

5. Place cutlets on a baking sheet coated with cooking spray. Lightly coat cutlets with cooking spray.

6. Bake at 500 for 8 minutes or until done.
