Peach Mango Fruit Salsa

Ingredients

  • 3 c. tomatoes, chopped
  • 1 c. red onion, chopped
  • 1 c. yellow bell pepper, chopped
  • 1/3 c. jalapeno, seeded and chopped
  • 1 T garlic, chopped
  • 1 1/2 c. peaches, peeled and chopped (about 2 large)
  • 1 c. mango, chopped (about 1 large)
  • 1 T lime juice

Preparation

Step 1

1.) In a large pot over medium heat, combine the vegetables. Cook for 10 minutes. Add peaches and mango and cook for an additional 5 minutes.

2.) Remove from heat and add lime juice. Stir.

3.) Pack into hot jars using 1/4 in. headspace. Adjust 2-piece caps and process for 10 minutes in boiling water canner.
