- 2 cups flour
- 2 tsp baking soda
- 1 tsp ground ginger
- 1/2 tsp cinnamon
- 1/2 tsp ground cloves
- 1/4 tsp nutmeg
- 1/2 tsp salt
- 3/4 cup butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp vanilla
- 1 egg
- 1/4 cup molasses
Preparation

In a medium bowl, add the flour, baking soda, spices and salt, then mix with a whisk until well combined.
In a large mixing bowl, beat together the butter and 1/4 cup of the granulated sugar until pale and fluffy, scraping down the sides as necessary. Repeat with all of the brown sugar. With the mixer on medium speed, add the vanilla and the egg, beating until incorporated. Scrape the sides of the bowl and then ad the molasses, beating on medium speed.
Add the flour mixture and mix on low speed until just combined.
When everything is completely mixed, cover and chill for at least 30 minutes - until the dough has firmed up.
As it chills, preheat the oven to 350F and line a baking sheet with parchment paper.
Using a spoon, scoop out 1" balls of dough and roll them between your hands to make spheres. Drop into a small bowl of the remaining 1/4 cup sugar and roll gently with your fingertips to coat the dough on all sides.
Space the dough balls about 2" apart on the cookie sheet and bake until the edges are cooked and starting to crack, but the tops are still puffy, about 8 to 10 minutes (being checking at 8 minutes). Cool on the cookie sheet for a few minutes until the tops are starting to fall and crinkle. Remove to a cooling rack.
