Butter Cream Icing (for Yule Log)

Ingredients

  • 1 cup granulated sugar
  • 2 Tbsp flour
  • 1/2 c heavy cream
  • 3 egg yolks
  • 6 ounces un sweetened chocolate
  • 2 c unsalted butter

Preparation

Step 1

Combine sugar and flour in saucepan
Add cream gradually
Place over het and cook until thick
Add the egg yolks off the fire and then return for a few minutes
Add the chocolate broken into bits and stir until dissolved
Cream butter and combine with cooled chocolate mixture
Use 1/3 to ice the inside of the log
