Asparagus-White Bean Gratin

Ingredients
- 1 cup half-and-half
- 1 T lemon zest
- 1 t minced garlic
- 1/4 t salt
- 2-15oz cans cannellini beans, rinsed and drained
- 1/2 cup Parmesan, grated (divided into two)
- 1 lb asparagus spears

Step 1
In an oven-going skillet (I use my Le Cruset Cast Iron Skillet) stir together half and half, lemon zest, garlic and salt. Stir in the two cans of cannellini beans and 1/4 cup of the Parmesan cheese. Bring to boiling. Reduce heat. Simmer, uncovered, 3-5 minutes or until slightly thickened. Place asparagus spears on top of bean mixture and sprinkle with the remaining 1/4 cup of Parmesan cheese and broil 4-6 inches from heat for 8 minutes or until browned and tender.
