Squash Casserole (Southern Living)

Ingredients

  • 4 LB Squash/Zucchoni, sliced
  • 1 Sweet Onion
  • 1 C (4 oz) Cheddar Cheese
  • 8 oz Sour Cream
  • 1 tsp Garlic Salt
  • 1 tsp Pepper
  • 2 Eggs, Beaten
  • 2 1/2 C Breadcrumbs (Italian)
  • 1 1/4 C (5oz) Parmesan Cheese
  • 2 TBS Butter

Preparation

Step 1

Preheat oven to 350 degrees.

Cook squash in covered pan with boiling water until tender, 8 minutes or so. Drain well.

Saute onion in butter. Combine, squash, cheese, sour cream, garlic salt, pepper, eggs, 1 C breadcrumbs, 3/4 C Parmesan Cheese. Pour into 9X13 baking pan.

Stir together melted butter, 1 1/2 C Breadcrumbs, 1/2 C Parmesan Cheese. Sprinkle over top of casserole.

Bake 35-40 minutes, until set.
