Chicken and Veggie Panini

Ingredients

  • 1/2 cup light vinaigrette
  • 1 small zucchini, sliced lenghwise
  • 3/4 pound fresh mozzarella ball
  • 1 lb. thin chicken breast
  • 1/3 cup sun dried tomatoes packed in oil, drained and chopped
  • 2/3 cup mayo
  • 1 jar roasted roasted red peppers
  • 1-2 loaves french bread
  • 10 large fresh basil leaves, washed and patted dry

Preparation

Step 1

1. Combine 2 Tbl. vinaigrette and zucchini. Grill zucchini on grill pan or saute pan. Set aside.

2. Combine the rest of the vinaigrette and chicken cutlets. Grill chicken on grill pan or saute pan. Set aside.

3. Cut mozzarella into slices---set aside.

4. Cut roasted peppers into strips--set aside.

5. Mix chopped sun-dried tomatoes into mayo, set aside.

Ok, time to assemble. Cut french bread into portion size you would like. Spread tomato mayo on one side, layer chicken, zucchini, mozzarella, red pepper, and basil. Put top of bread on and grill on panini maker. If you don't have a panini maker, heat a large non-stick skillet and spray non-stick spray (pam) and add sandwiches, cover sandwiches with the bottom of a heavy pan or pot (you can weigh them down with cans). Cook 4-5 minutes till cheese melts.
