Hash Brown Breakfast Casserole

This is a great use for left over Holiday Ham.
My family is small so we divide this recipe between two 8x8 pans and freeze the hash brown, ham and cheese. Then before baking add the egg mixture. This is great to provide the energy needed for a day of skiing but I bake it the night before and just reheat to save time in the morning.

Ingredients

  • Beat together:
  • 1 (26 oz) bag shredded hash browns
  • 2 cups chopped hem
  • 2 cups shredded cheddar cheese
  • 2 cups Monterey Jack cheese
  • Layer in greased 9x13 pan ending with cheese
  • 6 eggs
  • 1/2 cup milk
  • 1 teaspoon seasoned salt

Preparation

Step 1

Pour over layers and bake at 350 degrees for 45-50 minutes (may take up to 2 hours if frozen). Check by pulling apart center of casserole - if still milky continue to cook another 5 minutes, etc.
