Ginger Gems

This is a vegan recipe from Vegetarian Times.
For a spicier cookie add 1 teaspoon of ground cinnamon and 1 teaspoon of ground ginger to the dough.

Ingredients
- 3/4 cup sugar
- 1/4 cup vegan margarine, softened
- 1/4 cup vegetable oil
- 1/4 cup crystallized ginger, chopped
- 1 Tbsp molasses
- 1 Tbsp vanilla extract
- 2 cups whole wheat flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup finely chopped walnuts
- 4-1/2 Tbsp lime juice
- 3 cups confectioners' sugar
Preparation
Step 1
1. Preheat over to 375 F. Coat baking sheets with cooking spray. Whisk together sugar, margarine, oil, ginger, molasses, vanilla and 1/4 cup warm water. Combine flour, baking soda and salt in a separate bowl. Stir flour mixture into sugar mixture. Fold in walnuts. **For a spicier cookie add 1 tsp ground cinnamon and 1 tsp ground ginger to the cookie dough at this point.
2. Drop spoonfuls of dough 1 inch apart onto prepared baking sheets. Bake 10 to 12 minutes. Cool 3 minutes, then transfer to wire racks to cool completely.
3. Whisk lime juice and sugar until smooth. Dip cookies in glaze. Let glaze harden on wire racks, then store cookies in airtight container.
