Crock pot chicken corn chowder
- 1 lb. chicken, cut in small pieces
- 2 ribs celery, diced
- 1/2 onion, chopped
- 3 potatoes, cut into small cubes
- 2 carrots diced
- 2 cans fire roasted corn kernels
- 2 c. chicken broth
- 2 c. milk
- 12 oz. can evaporated milk thickened with 3 Tbs. corn starch
- 1 Tbs. butter
- 2 cloves garlic
- 1/2 tsp. thyme
- 1/2 tsp. oregano
- 1 bay leaf
- dash of cayenne pepper
Place carrots, potatoes, onion, celery, corn and chicken in crock pot.
Add chicken broth, milk and salt and pepper to taste.
Cook on low for 7 hours.
During last 30 min. of cooking add thickened evaporated milk.
