Ingredients

  • 1 lb. chicken, cut in small pieces
  • 2 ribs celery, diced
  • 1/2 onion, chopped
  • 3 potatoes, cut into small cubes
  • 2 carrots diced
  • 2 cans fire roasted corn kernels
  • 2 c. chicken broth
  • 2 c. milk
  • 12 oz. can evaporated milk thickened with 3 Tbs. corn starch
  • 1 Tbs. butter
  • 2 cloves garlic
  • 1/2 tsp. thyme
  • 1/2 tsp. oregano
  • 1 bay leaf
  • dash of cayenne pepper

Preparation

Step 1

Place carrots, potatoes, onion, celery, corn and chicken in crock pot.
Add chicken broth, milk and salt and pepper to taste.
Cook on low for 7 hours.
During last 30 min. of cooking add thickened evaporated milk.
