Cinnamon Swirl Muffins

Ingredients

  • 3/4 cup (1.5 sticks) margarine
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 (8 oz) plain lowfat yogurt
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda

Preparation

Step 1

Preheat oven to 400.

In large bowl, cream margarine, sugar, eggs, and vanilla. Add yogurt. Add rest of ingredients. Blend only until moistened.

Spray 18 muffin cups. Fill 1/3 with batter. Sprinkle with cinnamon sugar. Fill with remaining batter. Sprinkle with more cinnamon sugar.

Cooke 12 - 15 minutes until toothpick comes out clean.
