Ingredients

  • 3 tbl butter
  • 1/3 c red pepper, diced
  • 1/3 cup celery, diced
  • 1/3 c onion
  • 1/2 c panko
  • 1/4 c scallion, minced
  • 1/4 c mayo
  • 1 egg
  • 2 tbl minced parsley
  • 2 tsp Worcestershire sauce
  • 2 tsp lemon juice
  • 2 tsp old bay seasoning
  • 1 tsp dry mustard
  • 1/2 tsp fresh gr pepper
  • 1/4 tabasco sauce
  • 1 # crab meat lumped

Preparation

Step 1

sauté the pepper, celery and onion in butter 5 minutes of until tender
cool slightly
in a bowl, combine all the rest of the ingredients EXCEPT CRABMEAT
Pick through crab for shells or cartlidge
Using fingers, gently blend the crab into the mixture
This helps preserve the large pieces of crab
Shape crab mixture into cakes
Chill in the refrigerator for a least 1 hr
Broil cakes for 3-4 minutes or until browned
Turn them very carefully
I use a spatula and my fingers so they don't fall apart
Broil other side of 3-4 minutes
Place them on a platter and garnish with parsley and lemom
Serve with cocktail sause and roumelade
