Ingredients
- 500 g Granary flour (malted/spelt flour)
- 200 g bleu cheese
- 1 tsp salt
- 10 g bicarbonate of soda
- 50 g honey
- 100 g walnuts
- 400 ml milk
- 1 Tbl yogurt
Preparation
Step 1
Combine flour, salt and soda in a bowl. Crumble bleu chees and mix through flour. Don't over mix so that you retain little pockets of bleu cheese in your mix.
Form a well in the center and add the honey, milk and yogurt. Fold in the flour with the walnuts, making sure not to over mix.
Grease and flour a cake tin. Add mixture and bake at 390 degrees for 40 minutes or until the tip of a knife comes out clean when inserted in the center.
Transfer to a wire rack and allow to cool.
