Eggnog Cheesecake Crumble Bars

Ingredients
- For the Cake
- 1 vanilla cake mix
- 1/3 cup butter, melted
- 1/3 cup eggnog
- 1/2 teaspoon rum extract
- For the Cheesecake
- 1 - 8 ounce package cream cheese
- 1/4 cup sugar
- 1/4 cup eggnog
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon rum extract
- For the Glaze
- 1/2 cup powdered sugar
- 1 Tablespoon + 1 teaspoon eggnog
- nutmeg
Preparation
Step 1
Beat together the dry cake mix, melted butter, eggnog, and extract until a soft dough forms. Press half the mixture into the bottom of a greased 8x8 baking dish. Set aside.
Beat the cream cheese and sugar until creamy. Add the eggnog, nutmeg, and extract and beat again. Pour onto the crust in the pan.
Crumble the rest of the dough over the top of the cheesecake. Bake at 350 degrees for 40 minutes. Do not over bake. Remove and let cool.
Whisk together the powdered sugar and eggnog. Drizzle over the cooled bars. Sprinkle with nutmeg and let set. Cut into 12 bars. Store in a sealed container in the refrigerator.
