Ingredients
- 3/4 cup cooked quinoa
- 4 boneless chicken breasts
- 1/4 cup dijon mustard
- 1 tbsp chopped fresh thyme
- pepper
- olive oil cooking spray
Preparation
Step 1
1. Position a rack in the middle of the oven and preheat to 300. Spread quinoa on parchment lined baking sheet. Bake until lightly toasted 25 to 30 minutes. Let cool then transfer to a bowl breaking up any clumps. Dscard the parchment reserve the baking sheet.
2. Increase oven to 45. Combine chicken, mustard, thyme, season with pepper. Mix with spatula to coat. Place a rack on the baking sheet. Dip the chicken in quinoa then place on rack.
3. Spritz chicken with cooking spray, bake until cooked thru. Sprinkle with thyme.
