Barroom Chowda

Ingredients

  • 1 medium or 2 c. onion
  • 4 stalks or 1 c. celery
  • 4-5 cloves garlic, minced
  • 1 stick butter
  • 4 c. chicken broth
  • 2 c. heavy cream
  • 1/2 c. tequila (optional)
  • 1 bottle (8 oz.) clam juice
  • 2 potatoes, peeled and diced
  • 1 tsp cayenne pepper (or more according to the crowd)
  • 1/2 tsp nutmeg
  • 6 oz. shredded cheddar
  • 1 small fresh lobster
  • 8 oz shrimp
  • 8 oz clams
  • small haddock filet

Preparation

Step 1

If cooking live lobster, take care of that first so it has time to cool while preparing the rest.

Cook the first 4 ingredients 5-7 minutes.

Add 1 tsp each of sage, cumin and thyme
Add 1/3 c. flour, stir and cook about 3 min. until bubbling

Add the remaining ingredients and cook for about 10 minutes

You can add the above fish or others to your liking. Add any uncooked fish first and cook for about ten minutes. Then add any cooked fish and heat to warm.

Serve with Goldfish crackers, oyster crackers or a loaf of French bread.
