Ricotta Cheese Cookies

Ingredients

  • 2 c. sugar
  • 1 c. (2 sticks) butter, softened
  • 1 15 oz. container ricotta cheese
  • 2 t. vanilla
  • 2 large eggs
  • 4 c. flour
  • 2 T. baking powder
  • 1 t. salt
  • 1 1/2 c. confectioners sugar
  • 3 T. milk
  • Red & Green sugar crystals

Preparation

Step 1

Preheat oven to 350. Mix flour, baking powder, & salt in a medium bowl, set aside. In a large bowl with mixer at low speed beat sugar and butter until blended. Increase speed to high, beat until light and fluffy, about 5 minutes. At medium speed, beat in ricotta, vanilla, & eggs until well combined. Reduce speed to low, add flour mixture, beat until dough forms. Drop by level 1/2 tablespoon, 2" apart onto ungreased cookie sheet. Bake about 15 minutes or until light & golden brown (cookies will be soft). Remove to wire rack. When cool, prepare icing. Stir confectioner sugar and milk until smooth. Spread on cookies, sprinkle with candy sugar crystals. Set aside to dry completely, about 1 hour.
