Ingredients
- 1/2 cup plus 2 T all purpose flour, divided
- 2 t. salt
- 1 t. pepper
- 3 pounds stew beef, cut into 1 in. pieces
- 1 can (16 oz) diced tomatoes, undrained
- 3 potatoes, peeled and diced
- 1/2 pound smoked sausage, diced
- 1 cup chopped leek
- 1 cup chopped onion
- 4 ribs celery, sliced
- 1/2 cup chicken broth
- 3 cloves garlic, minced
- 1 t. dried thyme
- 3 T water

Step 1
Combine 1/2 cup flour, salt and pepper in plastic bag; Add beef and shake to coat.
Place beef in slow cooker; Add tomatoes with juice, potatoes, sausage, leek, onion, celery, broth, garlic and thyme; stir well.
Cover; cook on LOW for 8-12 hrs. or HIGH 4-6. One hr. before serving, gurn on HIGh. Whish together remaining 2 T flour and water in small bowl; stire into slow cooker. Cover; cook until thickened.
