LEG OF LAMB WITH LEMON MARINADE (Edie Gillespie)

Ingredients

  • 1/4 cup lemon juice
  • 1/2 cup olive oil
  • 1 tsp each of slat, marjoram & thyme
  • 1 tsp pepper
  • 4-5 crushed garlic cloves
  • 1/2 cup chopped onions
  • 1/4 cup chopped fresh parsley
  • 5 lb leg of lamb, deboned & butterflied)

Preparation

Step 1

Mix marinade ingredients together. Marinate lamb for 2 hours, then BBQ.
