Ingredients

  • 1 cup bulgur wheat
  • 1 1/2 cup water
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • lots of garlic crushed 4 or 5 cloves
  • salt and pepper
  • 1 small cucumber (kirby) chopped
  • 1 can of chickpeas
  • 2 small tomatoes chopped
  • 2 or 3 scallions

Preparation

Step 1

Combine bulgur and water, then bring to boil.
Remove from heat; cover and let stand, bulgur will absorb all the water
add all ingredients and mix together.

Can be eaten warm or refrigerated.
