- 1 cup bulgur wheat
- 1 1/2 cup water
- 1/4 cup lemon juice
- 1/4 cup olive oil
- lots of garlic crushed 4 or 5 cloves
- salt and pepper
- 1 small cucumber (kirby) chopped
- 1 can of chickpeas
- 2 small tomatoes chopped
- 2 or 3 scallions
Combine bulgur and water, then bring to boil.
Remove from heat; cover and let stand, bulgur will absorb all the water
add all ingredients and mix together.
Can be eaten warm or refrigerated.
