Ingredients
- 2 large sweet potatoes
- 2 large Russet potatoes
- 1/3 cup extra virgin olive oil
- 1 1/2 teaspoons sweet smoked paprika, plus 1/2 teaspoon for garnish
- 2 teaspoons fresh rosemary, chopped
- 1 1/2 teaspoons garlic, finely chopped
- 2 teaspoons coarse salt
- 1 teaspoon ground black pepper

Cook Time: 1 hour
- Preheat oven to 375° F.
- Line a large baking sheet (or two, depending on size) with heavy duty aluminum foil.
- Chop sweet and Russet potatoes into 1 1/2-inch pieces. Place in large mixing bowl.
- Add olive oil to potatoes in bowl and toss well.
- Add sweet smoked paprika, rosemary, garlic, salt and pepper to bowl and mix until spices are evenly distributed.
- Arrange potatoes in a single layer on baking sheet(s).
- Bake until potatoes are golden brown and crisp, about 1 hour. About halfway through cooking, flip the potato pieces to ensure even browning.
- Remove from oven and let rest for about 10 minutes. Sprinkle with 1/2 teaspoon smoked paprika and serve.
