Walnut Sauce - Salsa di Noci

A classic Italian sauce with pasta. Ravioli works really well with this sauce
Ingredients
- 6 oz walmuts
- 2 garlic cloves
- 2 slices white bread (crusts removed)
- milk (for soaking and to thin out sauce)
- 3 Tbsp olive oil
- salt to taste
- Pasta: Penne, Tagliatelle and Ravioli are all great with this sauce.

Preparation
Step 1
1. Soak the bread in milk. Use just enough milk to wet the bread, but do NOT drench it.
2. Place the bread in a food processor, along with the walnuts and garlic. Puree.
3. Add some salt and the 3 Tablespoons of olive oil to the mixture. Then add a little more milk. Puree again, until you have a creamy consistency.
4.***At this time you can either pour the sauce directly on to the hot pasta OR in a small sauce pan, heat the sauce over low to low/med heat. Do not over-heat or boil the sauce.
5.***Pour the warm sauce over the hot pasta.
6. after adding the sauce, sprinkle some parmesan cheese and toasted walnuts on top of the pasta. Serve immediately.
