Lemon Sauce

Ingredients

  • 1 large egg yolk
  • 1/4 cup sugar
  • 2 teaspoons cornstarch
  • 1/2 cup water
  • 1/4 cup fresh lemon juice
  • 2 teaspoons butter

Preparation

Step 1


1. In a medium bowl, place egg yolk. Set aside.
2. In a small saucepan, whisk together sugar, cornstarch, 1/2 cup water, and lemon juice. Bring to a boil over medium-high heat; cook for 1 minute. Remove from heat. Whisk half of hot sugar mixture into egg yolk. Whisk egg yolk mixture into remaining sugar mixture in pan. Cook, stirring constantiy, over medium-low heat until slightly thickened and bubbly, approximately 1 minute. Remove from heat; stir in butter. Pour into a bowl; let cool slightly. Cover and refrigerate until chilled, approximately 2 hours.
