Ingredients

  • 6 egg yolks
  • 3/4 cups sugar
  • 2/3 cups milk
  • 1 1/4 cup heavy whip cream
  • 1/2 tsp. vanilla extract
  • 1 pound mascarpone cheese
  • 1/4 cup brewed coffee
  • 2 Tablespoons rum
  • 2 (3 oz.) packages lady fingers cookies
  • 1 Tablespoon unsweetened cocoa

Preparation

Step 1

Separate the egg yolks and put in a medium saucepan along with the sugar.

Whisk together until smooth. Add the milk and bring to a boil stirring continuously. Boil for 1 minute. Let cool slightly and then cool in refrigerator for an hour.

Beat together the whip cream and vanilla in a medium bowl until it forms stiff peaks. Set aside.

Add the mascarpone cheese to the cooled egg mixture and whisk together until smooth.
In a small bowl mix together the coffee and rum. Dip the lady fingers in the coffee mixture and arrange them in the bottom of a 7x11 dish. Spread half of the mascarpone mixture over the top of the lady fingers, then spread the whip cream mixture on top. Repeat the layers. Sprinkle the cocoa on the top then cover the dish and chill in refrigerator for 4-6 hours (until set).
