Ingredients
- Salad:
- 4 cups chopped kale
- 1 1/2 cup chickpeas, chopped
- 2 green onions, chopped
- 1/2 cup almonds, chopped
- 1/2 cup sesame seeds
- 1 avocado, chopped (optional)
- Dressing:
- 3 tbsp extra-virgin olive oil
- 1 tbsp apple cider vinegar
- 1 tbsp honey
- 1/2 " piece of ginger, peeled and minced
- Pinch of salt and freshly ground pepper
Preparation
Step 1
Make the dressing by combining all ingredients in a small bowl and whisking vigorously until everything is emulsified. Taste and adjust any seasonings a necessary and set aside until you are ready to dress the salad.
Toast the almonds and sesame seeds together in a small frying pan over low heat with a splash of olive oil. This should only take about 5 minutes. Cool slightly.
Place the kale in a large bowl with a drizzle of the dressing and massage the dressing into the leaves. Then, toss in the rest of the ingredients and add in more of the dressing little by little. Keep tossing and dressing until you feel that the salad is sufficiently dressed. Moist, but not too wet so that it weights it down.
