Ingredients

  • 6 cups water
  • 4 cups potatoes, diced
  • 2 cups carrots, sliced
  • 1 medium onion, chopped
  • 2 celery stalks, chopped
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 1/3 cup butter
  • 1/2 cup flour
  • 2 cups milk
  • 2 cups cheddar cheese, shredded
  • 1 cup corn
  • 2 cups cooked ham, cubed

Step 1

In a large pot, bring to boil; water, potatoes, carrots, onion, celery, salt and pepper. Reduce heat and simmer until vegetables are tender, about 10 minutes. In another saucepan, melt butter, stir in flour to make a smooth paste, slowly pour and whisk in milk, cook and stir until thickened. Add cheese and stir until melted. Add cheese mixture to undrained vegetable pot. Add corn and ham and continue to simmer and stir for a few minutes until heated. Top with grated cheese.
