Ingredients
- 3 Tbsps olive oil
- 2 Tbsps flour
- 1 clove chopped garlic
- 8 Tbsps chile powder
- 1 tsp salt
- 2 cups hot water
Preparation
Step 1
Add flour and garlic to oil in sauce pan over medium heat. Brown well.
Add New Mexico chile powder and blend. Slowly add water, salt, and cook until thick.
TO MAKE NEW MEXICO STYLE ENCHILADAS, fry corn tortilla in oil until warmed. Drain. Place on plate. Add finely chopped onion, grated cheddar cheese and chile sauce in said order.
Place another tortilla on top and repeat the process. On the top tortilla, make sure to pour enough chile sauce to cover.
Two tortillas make one serving. Heat in microwave until cheese is melted. Top with fried egg and enjoy.
