Ingredients

  • 3 eggs
  • 1 cup vegetable oil
  • 2 cups sugar
  • 1 T. vanilla
  • 2 cups zucchini, shredded
  • 2 1/2 cups all-purpose flour
  • 1/2 cup baking cocoa
  • 1 t. salt
  • 1 t. baking soda
  • 1 t. ground cinnamon
  • 1/4 t. baking powder

Preparation

Step 1

In a mixing bowl; beat eggs, sugar and vanilla.
Stir in zucchini.
Combine all dry ingredients. Add to zucchini mixture and mix well. Add oil, mix well.
Pour into two greased 8x4 inch loaf pans.
Bake at 350 degrees for 1 hour or until knife inserted in middle of loaf comes out clean.
