Cookies, Grandma's Giant Gingerbread Boy

Ingredients

  • 2.5 - 2.75 cups flour
  • .5 tsp. baking soda
  • .5 tsp. salt
  • 1 tsp. ground ginger
  • 1 tsp. ground cinnamon
  • .5 tsp. nutmeg
  • .25 tsp. ground cloves
  • .5 cup solid shortening
  • .5 cup granulated sugar
  • .5 cup + 2 tbsp molasses
  • 1 egg beaten

Preparation

Step 1

1. Preheat oven to 325 degrees.
2. Lightly spray pan with vegetable pan spray.
3. Thoroughly mix flour, baking soda, salt and spices.
4. Melt shortening in large saucepan. Cool slightly. Add sugar, molasses, and egg. Mix well.
5. Add 2 cups flour mixture and mix well.
6. Turn mixture onto lightly floured surface. Knead in remaining dry ingredients by hand. Add a little more flour, if necessary, to make dough firm.
7. Divide dough into two equal parts and press one portion into prepared pan.
8. Bake at 325 degrees for 19 - 22 minutes, or until edges brown slightly.
9. Cool in pan 5 minutes. Turn pan over; lightly tap pan to remove cookie.
10. Cool completely on cooling grid. Repeat process with 2nd portion.
