Ingredients
- 1/4 lb. fresh mushrooms, sliced
- 1 T. butter
- 3 c. chicken broth
- 2 c. chicken, diced
- 3 c. tomato juice or 1 (16-oz) can whole tomatoes, diced and 1 (8-oz) can tomato sauce
- 1/2 c. carrots, thinly sliced
- 1 env. Italian salad mix
- 1/2 c. rice, precooked
Preparation
Step 1
Saute mushrooms in butter. Add chicken broth, chicken, tomato juice, whole tomatoes, tomato sauce, carrot and Italian salad mix. Simmer for 15 minutes. Add precooked rice.
