Ingredients
- 1/2 c Flour
- 2 t Baking Powder
- 1/2 t Salt
- 1/2 t Baking Soda
- 1/2 t Cinnamon
- 1 c Zucchini - peeled, grated
- 2 Eggs
- 1 c Sugar
- 1/2 c Cooking Oil
- 1 t Vanilla
- 1/2 c Nuts - chopped
- 1/2 c Raisins (optional)
Preparation
Step 1
Sift flour, baking powder, salt, baking soda and cinnamon together and set aside. Beat eggs, add sugar and vanilla; mix well. Add oil and blend very well. Add zucchini, stir. Blend in flour mixture, nuts and raisins.
Pour into greased 9x5 loaf pan and bake for 55-60 minutes at 350. Cool 10 minutes.
For muffins - bake for 20 minutes at 350.
