Ingredients

  • 1/2 can (15 ounces) salt-free pinto beans, rinsed and drained
  • 1/3 cups and 1/4 tablespoons green salsa
  • 1 1/4 cups cooked brown rice
  • 1 tablespoons lime juice
  • 2 tablespoons chopped cilantro
  • 2 whole wheat tortillas (8~ diameter)
  • 1/2 cups (4 ounces) shredded monterey jack cheese
  • 1/4 avocado, sliced

Preparation

Step 1

1. Heat the oven to 350°F.

2. In a saucepan or skillet over medium heat, combine the beans and salsa and heat until warmed through, about 3 minutes. Remove from the heat. Add the rice, lime juice, and cilantro.

3. Heat the tortillas according to package directions and place on a work surface. Sprinkle 1/4 cup of the cheese in the center of a tortilla. Top with onequarter of the avocado slices. Mound a scant 1 cup of the rice and bean mixture on top. Fold the sides of the tortilla over the filling and roll up. Place on a baking sheet, seam side down, and prepare the remaining burritos.

4. Heat the burritos until golden and heated through, 15 minutes, turning once.
