Bruschetta

Ingredients

  • 3 firm Roma tomatoes finely diced (about 1-1/2 cups)
  • 1 tablespoon minced fresh basil
  • 2 tsp. minced garlic
  • 2 tsp. diced marinated sun-dried tomatoes
  • 2 tsp. extra virgin olive oil
  • 1 tsp. balsamic vinegar
  • 1/4 tsp. salt

Preparation

Step 1

1. Toss diced tomatoes with basil, garlic, sun-dried tomatoes, olive oil, vinegar, and salt in a medium bowl. Cover and chill 1 hour.

2. Combine 1 tablespoon grated parmesan cheese with a pinch of dried parsley flakes to sprinkle over each slice of french bread and bake for 5 minutes at 450 degrees or until the bread starts to crisp.

3. Before serving strain a little of the liquid off the top so it isn't so soupy.
