Quick Beef Soup

Ingredients

  • 3 stalks celery, sliced
  • 3 potatoes, diced
  • 4 carrots, sliced
  • 1 tablespoon butter
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 2 beef bullion cubes
  • 1/2 pound extra-lean ground beef
  • 4 cups water
  • chopped parsely, to taste
  • 1 - 2 tablespoons tomato paste
  • crusty Italian bread (optioanl)

Preparation

Step 1

Brown ground beef in a soup pot. Drain fat.

Add all ingredients to browned ground beef except tomato paste and parsely. Bring to a boil. Cover, lower heat and simmer for 20 - 25 minutes or until potatoes are tender. Spoon in tomato paste until you achieve a satisfactory color. stir in pasrsely.

Serve hot with crusty bread, if desired.
