Ingredients

  • 4 1/2 cups all purpose flour
  • 1/4 tsp baking soda
  • 1/4 tsp fine salt
  • 2 lrg eggs
  • 2 tsp vanilla extract
  • 3 sticks unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 1/2 cup confectioners' sugar

Step 1

1) Whisk the flour, baking soda and salt in a med bowl. Mix the eggs and vanilla with a fork in a small bowl.

2) Beat the butter, granulated sugar and confectioners' sugar together in the bowl of a stand mixer on low speed until the butter has picked up the sugars, about 30 secs. Increase speed to me and beat until slightly creamy, about 1 min, stopping halfway through to scrape the bowl.

3) Reduce the speed to low, slowly add in the egg mixture and beat until combined. Add the flour mixture a heaping cup at a time, in 3 additions, stopping a few times to scrape the bowl and beaters. Once all the flour is just incorporated, increase the speed to med and beat until the dough is very smooth, about 2 mins.

4) Turn the dough out of the bowl and bring it together. Divide the dough into 3 even pieces, each about 13 oz. Shape each piece into a 6 inch square and wrap in plastic wrap. Refrigerate the dough for at least 3 hrs or overnight.

5) Take dough out of the refrigerator 15 mins before rolling out. Roll out and cut. Transfer to parchment lined baking sheets. Freeze dough 10 mins before baking then bake in preheated 350 degree F oven. Bake until just golden brown 7 - 20 minutes depending on how you cut them.

6) Let pieces cool completely on baking sheets on cooling racks 30 mins.
